Tom studied NVQ level three practical cookery at south downs college, then earned a place through a work experience program with D&D restaurants after moving to London at eighteen.
He moved to his first 1* restaurant, Launceston Place, with D&D and Tim Allen.
After a couple of years break, Tom then returned to the world of Michelin cooking, joining Jason Atherton's Social Company at City Social, under the tutorage of Paul Walsh. He worked there for three years, reaching the position of sous chef. Tom worked with the social company at Pollen Street Social while waiting to open the Biltmore Hotel in Mayfair as Senior Sous Chef.
After ten years in London, he decided to return to his roots here in Hampshire.
