Executive chef for the Exclusive chefs Academy

 
I came to Lainston House in 1986 as a Senior Chef and I climbed the ranks to Executive Chef after doing my time & training in some of the most prestigious hotels along Park Lane, London. 

In my time at Lainston House I achieved many accolades both personally and for Lainston House and the Exclusive Collection.

I handed the Lainston operation over some 10 years ago to start the Chef’s Academy Programme for the Exclusive Collection. 

This year we celebrate 10 years of The Chefs Academy and my role is to facilitate the recruitment, training and development of the Chefs who have successfully gained a place on our two year Culinary Chef’s Academy Programme. 

This Academy journey gives these new Chefs the opportunity to gain great food knowledge and hands on experiences with every aspect of food from plot to plate.   

I have recruited over 150 student Chefs from colleges locally and beyond during the 10 years and have retained 85% of them meaning that you will find them in the kitchens of one of our Exclusive Collection properties.

Many of the Chefs have gone onto take senior positions and many are still developing further and climbing the ranks in Exclusive Collection kitchens …

The journey continues….
